Both carry the title Meilleur Ouvrier de France, one of French cooking's most selective distinctions, awarded to Roucheteau in 2019 and to Schilling in 2023.
Roucheteau holds one Michelin star and is known for a Mediterranean register built around the produce of the coast his restaurant sits on. Schilling holds two stars and has built his reputation on a wine focused approach to cooking, where the pairing is treated as part of the dish's own construction rather than an afterthought poured alongside it. Rather than each chef running a separate course, the evening is built around a single collaborative menu carrying both their names.
The dishes announced so far include crab with tarragon hummus, cauliflower with oyster and caviar, and confit hake with bergamot, a run of plates that reads as coastal and citrus forward rather than heavy, in keeping with Beaulieu's own setting on the water a short drive from Monaco. Dinner is priced at 245 euros per person, excluding drinks, and the evening is reservation only.
